It is produced by fermenting sweet tea with a SCOBY (Symbiotic Colony of Bacteria and Yeast) which consumes the sugars and tea tannins resulting in a delicious, low-sugar beverage bursting with healthy organic acids and probiotics that are hugely beneficial to good gut health and general well being.
